3 1/2 cups all purpose flour
1 1/2 cups sugar
1 cup butter (2 sticks), melted
2 tablespoons grated orange peel
1 tablespoon vanilla extract
1 tablespoon orange juice
4 teaspoons baking powder
1 teaspoon ground cardamon
1/4 teaspoon salt
6 large eggs

Preheat 7-inch pizzelle iron. Into large bowl, measure all ingredients. With mixer at low speed, beat ingredients until well blended, occasionally scraping bowl with a rubber spatula.

Pour 2 tablespoons batter at a time onto center of iron. Cover; bake. Do not lift cover during baking.

When done, lift cover and loosen pizzelle with fork. Remove pizzelle to wire rack to cool completely.

When cookies are cool, break each into 4 wedge-shaped pieces to serve. Store pizzelles in tightly covered container. Makes about 2 dozen pizzelles or 8 dozen wedges.
