3 cans great northern beans (drained and rinsed)
6 cups chicken broth
2 cloves garlic, pressed
2 medium onions, chopped
1 tablespoon oil
1 - 4 oz can mild green chilies chopped
2 teaspoons ground cumin
1 1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
4 cups diced cooked chicken
3 cups grated Monterey Jack cheese
Juice of a lime

Directions:
Directions:
Combine beans, broth, garlic, and 1/2 of chopped onions. Bring to a soft boil and simmer 30 minutes. Saute remaining onion in oil and add with chiles and seasonings. Mix thoroughly. Add chicken. Add lime juice. Simmer until chicken is heated through. Serve topped with cheese.

You may also top with salsa, ripe olives, chopped scallions, sour cream or guacomole.
