2 - 9" unbaked pie shells
8 apples, peeled, corded, sliced (use 3-4 varieties)
1/2 c. sugar
1/2 c. light brown sugar
1 tbsp. flour
1/2 tsp. nutmeg
1/8 tsp. salt
1/2 tsp. allspice
1/2 tsp. cinnamon
1/2 tsp. ground clove
3 tsp. cinnamon-sugar mix
1/2 tsp. pumpkin pie spice
2 tbsp. butter
2 oz. good bourbon (yes, preferrably Maker's MArk or other premium brand).

I a large mixing bowl, combine sugar, flour, salt, spices, and bourbon.
Add applie slices and toss lightly to coat.
Pour mixture into pie shell.
Add slices of butter on top.
Cover with 2nd pie shell and puncture.
Liberally sprinkle top with cinnamon-sugar mixture.
Bake at 400 degrees for 35-40 min. (covered with aluminum foil).
