2 c. cornmeal
1 can cream of chicken
4 tsp. sage
3 eggs
1 stick butter
7 chicken thighs

Can add chopped onion or boiled egg

Directions:
Boil chicken until tender. Add enough water to cornmeal to resemble pancake batter. Bake at 400º for about 20 min or until cracks appear on top. When cornbread is done, empty into bowl and crumble with pastry blender. In seperate bowl, mix together cream of chicken, sage and eggs. Add about 2 cups chicken broth to this mixture. Add to cornmeal. May need to add more broth to resemble soupy oatmeal. Debone chicken and add to dressing. Put enough oil to cover bottom of pan. Add a stick of melted butter. Pour in dressing and bake at 350º for 45 min covered and 15 min uncovered. Broil for a few minutes to make brown on top. Serve with cranberry sauce.
