2 T butter
1/2 C chopped onion
1 10 3/4 oz. can condensed cream of celery soup
1 8 oz. can (1 Cup) tomatoes
1/4 tsp. dried thyme
Dash of pepper
1/2 7 oz. pkg. (1 Cup) elbow macaroni
1 12 oz. can luncheon meat (Spam)
1/4 C chopped green pepper
1/4 C shredded cheese.

In medium skillet, melt butter, cook 1/2 C chopped onion in butter until tender but not brown. Stir in cream of celery soup, cut up tomatoes, thyme, and pepper. Add macaroni, cooked and drained; Spam, cut in 1 x 1/2 in. strips, and chopped green pepper. Turn into a 2 qt. casserole. Top with cheese. Bake uncovered at 350º for 35 - 40 minutes.

Angie-this one is especially for you. This is another one of those dishes that I made because it was cheap and it went a long way. The other kids didn't like it so much but it became one of your favorites. Who knew Spam could do that! Enjoy!
