4 -. 16 oz. Great Northern White Beans
4 C chopped, cooked chicken breast
1 T olive oil
2 - chopped medium white onions
4 - minced garlic cloves
2 - 4 oz. cans of diced green chilis
2 tsp. cumin
1 1/2 tsp. dried oregano
1/4 tsp.cayenne pepper
6 cups chicken stock
3 cups grated monterey jack cheese (about 12 oz.)

Directions:
Directions:
Place chicken in heavy, large saucepan. Add cold water to cover and bring to a simmer. Cook until just tender (about 15 min.). Drain and cool. Remove skin and cut chicken into small cubes.

Heat oil in same pot over medium-high heat. Add onions and saute until translucent. Stir in garlic, chilis, cumin, oregano and cayenne pepper. Saute 2 minutes.

Add undrained beans and chicken stock and bring to a boil. Reduce heat and add chicken and cheese and stir until cheese melts. Season to tast with salt and pepper. Ladle into bowls and top with sour cream.
