1/2 pound bacon, diced
1 pound ground beef or pork
1 large onion, chopped
1 (15 oz) can pork and beans
2 (16 oz) cans crushed tomatoes



CORNBREAD TOPPING:

1/2 cup yellow corn meal
1/2 cup all-purpose flour
2 Tbsp granulated sugar
2 tsp baking powder
1/2 tsp salt
1 egg, beaten
1/2 cup milk
2 Tbsp butter or margarine, melted
1 (4 oz) can diced green chiles, drained

Directions:

Fry bacon in 3-quart saucepan until crisp. Drain. Add crumbled meat and chopped onion. Brown evenly and drain. Stir in beans and tomatoes. Season to taste with salt and pepper. Bring to a boil. Reduce heat, cover and simmer, stirring occasionally, approximately 15 - 20 minutes.

Combine cornbread ingredients and mix until smooth. Grease inside edge of 2-quart casserole dish. Spoon in heated meat mixture. Spoon cornbread topping over the top. Bake in a pre-heated 425º oven, 25-30 minutes or until cornbread is golden brown.
