1 c all-purpose flour - sifted
1/2 tsp salt
1 T. confectioners' sugar
1 C. milk
1 T. melted butter - unsalted
4 eggs lightly beaten

Directions:
Directions:
1.Preheat oven to 500. Butter and lightly flour 6 popover tins
2. Mix together flour, salt & confectioners sugar. Whisk in the milk & butter. Beat in eggs, one at a time, beating well between each, until incorporated. The secret is in never over beating the batter: it should be like a heavy cream.
3. Fill the prepared tins 1/2 full with the batter Bake 15 minutes.
4. Without opening the oven, lower the heat 250º
BAke popovers 15 - 20 minutes longer, until golden brown, poking them to allow steam to escape 5 minutes before done. Serve Hot
