2 lb dried white beans
3/4 lb ham or ham hocks
1 large onion, chopped
1 large can of tomatoes
1 pod hot red pepper or 1 T chili powder
1 clove of garlic, chopped
Juice of 1 lemon
Salt and pepper to taste

Directions:
Wash, sort and place beans in large heavy pot. Cover with water and soak overnight. When ready to make soup, drain beans and add 2 qts of water and ham. Simmer for 2 hours, then remove bones and skin from ham hocks. Add the remaining ingredients and simmer for approx. 30 min. more.
