3 cups white rice, cooked
3 cups of milk
2/3 cup sugar
2 tbsp. butter
1/2 cup raisins (optional)
1 tsp vanilla extract
Zest of Lemon, grated
1 tsp of cinnamon, divided

Directions:
Directions:
Combine cooked rice, sugar and butter in a medium saucepan. Add raisins and vanilla. Cook for 25 minutes until most of the liquid is absorbed. Mix lemon zest and 1/2 tsp. tsp of cinnamon. Spoon pudding into serving dishes and dust with remaining cinnamon. May be chilled or served at room temp.
