6 chicken breasts
olive oil
1 onion
2 - 3 garlic cloves
1 pkg of frozen spinach, thawed & drained
2 cans (14.5 oz) diced tomatoes (w/garlic, oregano, basil)
salt and pepper to taste
parmesan cheese

Directions:
Directions:
Coat chicken breasts with olive oil. Place in casserole dish. Sprinkle with salt and pepper. Chop onion and garlic, cook in skillet until soft. Add 2 cans of tomatoes. Add spinach. Add more garlic to taste. Pour over chicken. Cook at 400º for 45 - 60 minutes. Sprinkle with parmesan cheese before serving.
