1 unbaked pie crust
1 1/2 lb. spinach or 20 oz. chopped frozen spinach
2 T butter or margarine
1/2 c chopped onion
1 clove garlic
3 T flour
1 1/2 c milk
1 1/2 tsp salt
1/4 tsp pepper
dash nutmeg
6 eggs
8 oz. shredded mozzarella cheese

Directions:
Directions:
Cook spinach, pressing out moisture and chop. In saucepan, heat butter, saute onion & garlic. Stir in flour, slowly stir in milk, add salt, pepper & nutmeg; let sauce thicken. Beat eggs and stir in to sauce. Add spinach and cheese, stirring until well blended.
Pour into pie shell. Bake in preheated 350º oven, 40 to 45 minutes, until firm to touch in center. Cool 10 minutes.
