1/4 c. of oil
2 c. chopped onion
1 c. cubed, extra firm tofu
2 chopped tomatoes
1 c. chopped broccoli
1 c. chopped cauliflower
1 can tomato paste
crushed red pepper
1/8 c. salt
garlic, tarragon and basil to taste
2 tbsp. of peanut butter

Directions:
Directions:
In a dutch oven add oil, onions and tofu. Simmer until tofu is golden brown. Add tomatoes and simmer. Add vegetables. Simmer and add 1 c. of water. Add can of tomato paste, crushed red pepper to taste, salt, garlic, tarragon and basil. Simmer. When it thickens, add 2 tbsp of peanut butter. Let simmer for 1/2 hour and serve over rice or couscous.
