2 eggs
2/3 c salad oil
2 tsp vanilla
1 tsp grated lemon zest
¾ c sugar
2 c flour
2 tsp baking powder
½ tsp salt

Directions:
Directions:
Heat oven to 400 degrees. Beat eggs with fork until well blended, stir in oil, vanilla and lemon zest. Blend in sugar until mixture thickens. Sift together flour, baking powder, and salt. Stir into oil mixture. Drop with teaspoon 2” apart on un-greased cookie sheet. Flatten with greased glass dipped in sugar. Bake 8 to 10 minutes, just until a delicate brown. Remove immediately from cookie sheet. Doubles easily.
