1/2 c shortening
1/2 c sugar
1 egg
1 c molasses
1 c boiling water
2 1/2 c flour, sifted
2 tsp soda
2 tsp cinnamon
1 tsp ginger
1/8 tsp salt

Directions:
Directions:
Sift dry ingredients. Cream sugar and shortening, add egg, beat. Add molasses. Mix well. Add water alternately with sifted dry ingredients. Bake at 350º for 30 to 45 min in greased and floured loaf pan.

Can be topped with a lemon glaze made with 1 1/4 cup powdered sugar, 1/4 cup lemon juice, 1/2 tsp lemon zest, and 1 tsp vanilla.
