1 ¼ c all purpose flour
¼ c sugar
2 Tbsp orange juice
1 Tbsp orange zest
Pinch of salt
8 Tbsp unsalted butter
3 Tbsp water
nicely shaped
½ tsp milk
2 Tbsp honey
¾ c dates, pitted, preferably Medjool
1/3 c sliced almonds, plus more for garnish

Preheat oven to 350 degrees. In a food processor, combine flour, sugar, salt, and half of zest. Pulse to combine. Add butter, pulse until mixture is crumbly. Drizzle water over mixture. Pulse until mixture comes together. Remove, cover and chill for 20 minutes. Select out approx 36 of the best shaped sliced almonds – put to one side. In food processor, combine dates, almonds, remaining zest and orange juice. Pulse to coarsely chop. Form dough into 1 ½” diam. balls. Flatten into 3 ½” circles. Place 1 heaping teaspoon of date mix in center. Fold up 3 sides of circle into the edges of the date mix. Press the dough around the date mix. You should have a triangular shape with a thick band of dough on 3 sides and a center of date filling, also in a triangular shape. Flatten the top slightly to pack the date and dough tightly against each other. Place pastries 2” apart on baking sheet. Mix milk and honey, brush on top of pastries. Take 3 almonds and press them flat onto the top of the pastries. The point of the almonds should face into the center, and out to the long edges of the pastry – forming a 3-point star. Bake until golden approx. 40 min. Transfer to rack and let cool.
