King Ranch Chicken Recipe

6 (8 oz) chicken breasts
24 corn tortillas
4 Tbsp butter
4 Tbsp flour
3/4 lb Monterey Jack cheese
s/p to taste
3 1/2 c. chicken broth
8 oz chopped green chile
1/3 lb cheddar

Directions:
Directions:
Remove skin; cook chicken with salt/pepper. Cool. Dice. Melt butter; add flour. Whisk 3 min. Slowly add broth. Cook until thickened to coat back of a spoon. Adjust s/p to taste. Drain chilies. Grate Jack cheese and cheddar.
Assemble (9x13 pan) in layers: 6 tortillas. Sprinkle with 1/3 of chicken and 1/3 of chile. Spoon 1/3 of sauce, then 6 more tortillas. Sprinkle half the grated cheese. 6 more tortillas. Repeat chicken layer. Use remaining tortillas, remaining sauce. Top w/ remaining cheese and chile. Bake at 350 for 30 minutes or so, until cheese melts. Serve hot.
