2 tsp vegetable oil
1 lg onion, finely chopped (3/4 c.)
28 oz fat-free chicken broth
15 oz pure pumpkin
1/4 c. orange juice concentrate
1 Tbsp fresh ginger, grated
1/8 tsp cayenne pepper
1/4 tsp salt
1/2 c whipping cream
Fresh chives or croutons for garnish.

Directions:
Heat oil in soup pot. Cook onion in oil 2 min, until soft. Add broth, pumpkin, orange juice concentrate, ginger, cayenne & salt. Mix well. Bring to boil. Reduce to simmer. Add cream.
Cook (stirring often) at a simmer up to 30 minutes. Serve.
Can be made ahead and refrigerated in airtight container. Reheat but don't boil. Ladle into bowls. Garnish with chives, sour cream or croutons.
