Spinach and romaine lettuce

Any combination of:
Sliced strawberries
Mandarin Oranges
Sugared Almonds

1 c. water
1 c. sugar
1/3 c. vinegar

For dressing, bring water, sugar, and vinegar to a boil. Take off heat and let cool. Add mayo until creamy.

Combine lettuce and whatever fruit you want to add. To make sugared almonds, heat almonds in a saucepan. Add about 1/8 cup sugar to Ĺ cup nuts, continuously stirring until the sugar caramelizes. Spread out on wax paper to cool so they donít clump together. Add to salad when cooled.

A little dressing goes a long way, so I usually half the dressing recipe. Extra dressing lasts up to a month in the fridge.
