Fill a roaster pan with whole potatoes with skin on. Boil for one hour. Cool, peal and slice.

Place sliced potatoes in bowl with:
-1 medium chopped sweet white onion
- 1 tsp. salt
- 1 tsp. pepper
- tsp. celery seed
- 1 c. sugar
-1 lb. fried and crumbled bacon (save the grease)
-Pour bacon grease over mixture
-red wine vinegar (same portion as the bacon grease) bring to a boil in the same pan used to cook bacon.

Mix all contents in bowl.
Put in crock pot on low heat.
Serve warm.
* If too dry, add more vinegar.
** If not sweet enough, add sugar.
