3-4 chicken breasts, cooked and shredded
red salsa
green salsa
2 cloves garlic, chopped fine
1/4 c. water
1/4 c. lime juice
tomatoes, chopped
onion, chopped
fresh cilantro, chopped
1-2 fresh limes, cut into fourths
corn and/or flour tortillas
shredded cheese
sour cream

Directions:
Directions:
Place chicken in large skillet. Put equal amounts of red and green salsa to saturate chicken (probably about 3/4 c. of each). Add the garlic, water, and lime juice. Stir thoroughly. Add more salsa or water if mixture seems dry. Heat to boiling. reduce heat, cover, and simmer 30 minutes, stirring occasionally. Make pico de gallo by combining chopped tomatoes, onion, and cilantro.
You may use chicken for tacos or quesadillas, add cheese, then top with pico de gallo, sour cream and a squeeze of fresh lime juice.
For tacos, we also love an authentic Mexican white cheese called Queso Fresco with it--you may buy at a specialty Mexican food market.
