3 lb. pork roast
1 lb. dry pinto beans
2 garlic cloves, minced
1 T. cumin
1 T. oregano
2 T. chili powder
1 T. salt
1 4-oz. can copped green chilies

Directions:
Directions:
Cover beans with cold water and soak overnight in crockpot. In the morning, remove beans (reserving soaking water), and put roast in bottom of cooker. Add remaining ingredients (including beans and soaking water) and more water if needed to cover ingredients. Cook on high for 1 hr. then low 6 hrs. Remove meat and shred with 2 forks. return meat to crockpot. cook on high 1 more hour. Serve over a bed of lettuce. Top with grated cheese and chopped onions and tomatoes. Or use as filling for flour tortillas.
