1 small box of fettuccine noodles
1 small onion, chopped
1/2 cup of diced prosciutto
1/4 cup sun dried tomatoes
minced garlic, to taste
olive oil
2 chicken breasts
1 small carton heavy whipping cream
1 pkg parmesan cheese, shredded

Directions:
Directions:
Put some olive oil in a pan, add the chopped onion and proscuitto. Cook over medium heat for a few minutes. Add the chicken breast, cubed or sliced thin. Cook until the chicken is no longer pink. Be very careful not to cook this over too high of heat. Add the cream and stir in well. Add the tomatoes and garlic and simmer. I also add fresh ground pepper at this point. You will notice the cream darkens some, this is good. Meanwhile you should have your noodles cooking, as it is almost done. After you have simmered this long enough to mix the flavors and soften the tomatoes add the parmesan cheese, a little at a time and stir to melt it. You can then mix the cooked noodles and the sauce together or serve them separate for the sauce to be spooned on top.

*You can make this go farther by using a big carton of cream and/or by adjusting the amount of parmesan you put in.

This recipe is very flexible, I change it up all the time. It started out with me just putting things together and everyone asking for the recipe so I had to come up with something! Prosciutto is like ham and bacon. You can usually find it by the specialty cheeses. It is easy to substitute and omit with this.
