Spanish Rice Recipe

1/2 C chopped onion
1 clove minced garlic
1 T cooking oil
28 oz can tomatoes
3/4 C long grain rice
1 tsp sugar
1 tsp chile powder
1/8 tsp pepper
dash hot pepper sauce
1 C shredded cheddar cheese

In large skillet cook onion and garlic in oil till tender but not brown. Sitr in undrained tomatoes, rice, sugar, chili powder, pepper, hot pepper sauce, 1 cup water.
Bring to a boil, reduce heat. Cover and simmer for 20 to 25 minutes or until rice is tender and most of the liquid is absorbed. Sprinkle with cheddar cheese.
