Refrigerator Cucumber Pickles Recipe

2 c. sugar
1 c. white vinegar
1/2 t. celery seed.


1 c. onions (diced or sliced)
1 c. green peppers (sliced)
1 T salt

12 med-large cucumbers (sliced thin; peeling
left on) or 6 cups

Directions:

Prepare (slice or dice) your cucumbers and place in a bowl, cover with ice and let sit in refrigerator for two hours or more.

Mix onions, peppers and salt. Refrigerate until ready to use.

Mix remaining ingredients in a saucepan to make a syrup. Let syrup cool while you layer cucumbers and then onion/pepper mixture in LARGE jar. When syrup is cool, pour over the vegatables in each jar. DO NOT SCREW ON LID. Just sit lid on top. These will keep crisp for one year.
