Ingredients: 1 cup dried canellini or Great Northern beans, soaked 2 Tbsp olive oil 1 onion, minced 1 celery stalk, minced 1 carrot, minced 1/2 lb smoked ham, diced (pancetta, proscuitto) 2 cloves garlic, minced (or to taste) 1 (28oz) can crushed tomatoes, including liquid 4 cups beef stock 1 bay leaf Fresh pepper to taste Rind from a piece of Parmesan cheese 2/3 cup dried small pasta, such as ditalini Minced fresh basil and freshly grated Parmesan cheese for garnish if desired

Directions:Drain the beans and set aside. In a large stockpot heat the oil over moderate heat until hot. Add the onion, celery and carrot and cook, stirring occasionally, for 5 minutes. Add ham and garlic cook, 1 minute. Add tomatoes, beans, beef stock, thyme, bay leaf and pepper to taste. Add Parmesan rind. Simmer for 30 minutes. Transfer 1/2 cup of the beans to a small processor or blender and puree. Return beans to pot and season with salt and pepper to taste. Bring liquid to a boil and add pasta. Simmer until pasta is tender, about 6 minutes. Garnish with basil and cheese. Serves 6. |

Notes: This is the best recipe I can find for Pasta e Fagioli. Courtesy of David Rosengarten from the food network. My father would make Pasta e Fagioli at Patuxent Dry Cleaners at lunch time. He would go to the grocery store next store and buy the ingredients.You could smell the aroma of this dish throughout the shopping center. I don't know how he made his, but to me it was THEE best I've ever had! Still to this day I can't duplicate it. Nice job, Dad! You've got me stumped.
