4 cans white beans of your liking (navy beans, great northern beans or cannolini beans) I use 2 different kinds for each pot - drained and rinsed.
2 cups cooked, cut up chicken (the best is to take 4 to 5 bonless, skinless chicken breasts, dust them with chili powder and cumin, drizzle a little EVOO on them and grill on medium heat. Cool and chop up)
1 can Rotel tomatoes
1 can diced green chiles
1 medium onion, chopped
6 T butter
5 T flour
Quart of chicken stock

Directions:
Directions:
Saute the onion in the butter. Then stir in the flour making a roux. Let this cook until onion is tender and roux is light brown. Whisk in chicken stock and let the mixture thicken. Add beans, chicken, chilis, Rotels and let mixture simmer.

Serve with fresh cilantro, fresh tomatoes, fresh avocados and tortillas. A fresh squeeze of lime over the bowl is wonderful.
