For the Cornbread:

1 1/4 cup self-rising cornmeal
1/2 cup self-rising flour
3/4 cup buttermilk
2 eggs
2 tablespoons vegetable oil
1 teaspoon salt

For the Corn Bread Stuffing:

Corn Bread
5 slices bread
1 sleeve of crackers
2 cups chopped celery
1 large onion chopped
1 stick butter
7 cups of hen broth or chicken broth ( my nanny prefers hen
broth)
2 1/2 teapoon sage
1 teaspoon salt
1/2 teaspoon pepper
2 eggs

Directions:
Directions:
For the Cornbread:
Pre-heat oven to 350 degrees. Add 2 tablespoons of oil and
add all ingredients to HOT iron skillet. Bake 20 to 25 minutes.

For the Dressing:

Pre-Heat oven to 350 degrees. Combine cornbread, slice
bread, and saltine crackers. Set aside.
Sautee onion and celery in butter until tender. Pour into
cornbread mixture. Add broth, sage, salt and pepper. Add 2
beaten eggs to mixture. Pour into greased pan and bake 45
minutes to 1 hour.
