3 large baking potatoes (about 1 1/2 pounds)
Salt and pepper to taste
1 cup grated queso afiejo or Romano cheese
3/4 cup finely chopped red onion
1 tablespoon chopped fresh cilantro
1 clove garlic, finely chopped

Directions:
Directions:
Heat oven to 375°. Bake potatoes about 1 hour or until tender.
Cut potatoes lengthwise in half. Score tops crisscross fashion, being careful not to cut through skin. Sprinkle with salt and pepper.
Mix remaining ingredients. Divide mixture among potatoes. Press into scores and on top of each potato. Bake about 5 minutes or until potatoes are hot.
