1/ 4 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 3 to 31/2 pound boneless chuck roast
2 teaspoons vegetable oil
1 large onion thinly sliced
1 1/2 can of beef consomme
1/2 can water
1/2 teaspoon salt
1/2 dried oregano
1/4 liquid smoke
1/4 teaspoon garlic posder
1/4 teapsoon pepper
1 bay leaf
6 small red potatoes
6 carrots

Combine first 3 ingredients; dredge roast in mixture. Brown
roast on all sides. Scatter onion over roast. Combine
consomme and next 6 ingredients; pour over roast. Bring to a
boil; cover, reduce heat and simmer 2 1/2 hours.

Add pototoes and carrots; cover and simmer 30 more minutes
until vegetables are tender.
