1/2 c. canola oil
1/2 c. unsweetened applesauce
2 egg whites
1/2 c. frozen apple juice concentrate, thawed
1 c. seven grain cereal
1/2 c. all purpose flour
1/3 c. whole wheat flour
1 t. cinnamon
1 t. allspice
1 t. ginger
1/2 t. ground cloves
1 c. golden raisins or cranberries
3/4 brown sugar
3 T lemon juice
1/2 c. unsweetened shredded coconut
1/2 c. mincemeat
3 c. quick oats
1 t. baking soda
1 T. vanilla extract

Directions:

Heat oven to 350ºF. Combine all ingredients in order.
Place 1/4 c. onto lightly greased cookie sheets and
bake about 15 minutes. Cool completely.
