1 T. flour
1/4 t. salt
4 (6 oz.) orange roughy filets, or other white fish
1/2 c. flour
1/4 c. flour
1/4 t. pepper
1/2 c. beer
1 T. olive oil
1 egg yolk
2 egg whites
parsley
lemons

Directions:
Directions:
Preheat oven to 500ºF. Sprinkle 1 T. flour and salt over
one side of fillets and place in a baking dish coated
with cooking spray. Combine 1/2 c. flour and pepper.
Gradually add beer, oil and egg yolk, stirring with a wire
whisk until blended. Beat egg whites until stiff peaks
form. Fold into beer mixture; spread evenly over fillets.
Bake for 10 minutes or until lightly browned.
