2 12-oz. cans artichoke bottoms (or fresh ones if you have them!)
2 c. vegetable stock (or Chicken Stock)
1/4 c. fresh lemon juice
1 T. Extra-Virgin olive oil
Salt
Black pepper

Directions:
Directions:
Drain the artichoke bottoms and place in a saucepan with the stock and lemon juice. Simmer gently for about 10 minutes to impart the flavor to the artichokes.
Remove the artichokes from the pan and place in a blender or food processor. (Save the liquid for another use or discard.) Add the olive oil, a little salt, and pepper to taste. Blend until smooth and well combined.
Serve at room temperature on grilled breads, or as a spread for a chicken or lamb sandwich.
