1 c. sour cream
1 package KNORR vegetable soup mix
1 c. mayonnaise
2 T. minced onion
1 c. chopped or finely shredded cheddar cheese
1 package frozen chopped spinach (thawed)
1 can water chestnuts (chopped)

Directions:
After spinach is thawed, drain well. Squeeze spinach using paper towels to rid all excess water. Spinach must be damp not wet.

Mix all ingredients together. Let sit overnight or at least 5 hours in the refrigerator. Serve with crackers or scoop ut center of round Hawaiian Bread and place dip in the center. Guests can pull off pieces of the sweet bread and dip.

My landlady gave me this recipe when I lived in Lexington. I liked it so much I took it everywhere for several years. I brought it to so many family get-togethers a second cousin told me when she was young she thought it was the only thing I knew how to make! I couldn't blame her for thinking that. It was my standard "funeral food" contribution for a long time.
