4 c. chopped chicken (turkey may also be used)
2 cans cream of chicken soup
1 l/2 c. mayonnaise
1/4 c. slivered almonds
1 small jar of pimentos
1 small onion chopped
Butter for top of dish
Pepperidge Farm herb stuffing mix

Directions:
Directions:
Mix the soup, mayonnaise, almonds, pimentos and onion. Blend well. Add chopped chicken or turkey. Place in a 9x13-inch glass dish that has been well-buttered. Crush the stuffing mix and cover the casserole. Place dots of butter all over the stuffing mix. Bake at 350º for 45 mins.or until brown and bubbling

My mother often made this wonderful chicken casserole for holiday meals. Unlike many casseroles, men seem to really like this one.
