4 large sweet potatoes
1 1/2 cups sugar

Directions:
Directions:
Peel and cut sweet potatoes into large chunks (1 1/2"). Place in large sauce pan, pour sugar over then cover with water, barely. Cook on medium heat until soft but not mushy. As water level drops, stir gently once or twice to keep moist. When done there will be a little syrup. Put all into baking dish for reheating or serving. This is a good dish to make a day ahead. Serves: 8-10

We have these throughout the year, and for holidays. Garnish with a drizzle of orange juice concentrate or a few nuts if you like. They're great as is.
