3/4 c. sugar
1/3 c. flour
1/4 tsp. salt
2 c. milk
3 egg yolks
3 tbsp. butter
1 tsp. vanilla

Directions:
Directions:
Mix flour, sugar and salt in medium sauce pan. Add milk gradually. Cook over medium heat, stirring constantly until thick. Cook two more minutes. Blend a small amount of the mixture into the egg yolks, slightly beaten. Return to pan and cook one minute. Remove from heat and add butter and vanilla.

Cool until lukewarm. Pour into a baked pie shell. Top with meringue or whipped cream or cool whip.

For coconut cream pie: add 1 c. coconut. For Butterscotch: substitute 2/3 c. brown sugar for white. For Chocolate: increase sugar to 1 c, and add 2 squares unsweetened chocolate with the milk.
