CRUST:
2 c. graham cracker crumbs
1/2 stick butter or margarine

FILLING:
16 oz. cream cheese, softened
1/3 c. sugar
4 eggs
1 1/2 tsp. vanilla
3 T. lemon juice
1/2 tsp. lemon rind

TOPPING:
1 1/2 c. sour cream
3 T. sugar
1/2 tsp. vanilla

Directions:
Directions:
CRUST: Combine crust ingredients, press into bottom of 10" spring-form or pie pan.

FILLING: Preheat oven to 375°. Beat all filling ingredients until smooth. Pour into crust and bake for 25 minutes, or until set. Remove from oven and cool to room temperature. You will need the oven again, so you can either leave it on or reheat it.

TOPPING: Reheat oven to 375°. Blend topping ingredients well and pour on top of cooled cake. Bake for 8 minutes. Remove from oven and cool to room temp. Then cover tightly (still in pan) and chill at LEAST 12 HOURS!
