1 red bell pepper, chopped fine
1 yellow bell pepper, chopped fine
1 medium onion, chopped fine
1 clove garlic, minced
1 bag frozen chopped spinach
3 oz. cream cheese
1 cup sour cream *
salt and pepper
Italian Cheese, shredded

Directions:
Directions:
Sauté peppers, onion, and garlic in olive oil. Cook spinach according to directions in microwave. Add to vegetables; put in casserole dish. Mix together and add in cream cheese, sour cream, salt, and pepper. Sprinkle Italian cheese on top. Bake at 350º till cheese is melted. (*Add less sour cream for casserole and more for dip.)
