1 2 1/2 to 3 pound broiler fryer, quartered
salt
thyme
marjoram
black pepper
3 tbsp oil
1/2 head lettuce, sliced
1 bay leaf
3 onions, peeled and sliced
5 carrots, pared, thinly sliced
1 package frozen peas
4 whole cloves

About 45 minutes before dinner: Sprinkle chicken with 1 tsp salt and 1/8 tsp each of thyme, marjoram and pepper. In salad oil in Dutch oven, saute til golden. Top chicken with lettuce, then bay leaf, onions, carrots and peas. Sprinkle with 2 tsp salt, 1/8 tsp thyme, marjoram and pepper, then cloves. Cover and simmer about 30 minutes or till chicken is fork-tender. spoon vegetables onto heated platter; top with chicken, then pour gravy over all.
