2 fresh lobster tails*
1 tbsp. each;peanut oil, coarsely grated lime rind, fresh cilantro, ground ginger
2 tbsp. lime juice
1/2 tsp. ground red pepper
5 cups chicken broth
1/3 cup long grained rice (uncooked)
1 cup un-coconut milk
2 tbls. lime juice
1/2 cup onion chopped
6 large mushrooms sliced
garnishes;green onions, fresh cilantro (chopped)

Directions:
remove lobster from shell, slice and set aside. cook ginger, red pepper, in peanut in a large sauce pan
over medium heat 1 minute. Addchicken broth and lime rind. bring to a boil stir in rice; cover reduce heat,simmer 15 to 20 minutes. Add coconut milk, sliced mushrooms onions, cilantro, cook 5 minutes, stirring mixture occasionally. Add lobster cook 3to 5 minutes. Remove from heat, stir in lime juice.

1lb. unpeeled medium sized shrimp may be subsituted peel and de-vien shrimp, can be used if desired.
