1 tsp salt
4 tbsp water
2 tbsp sherry
1/2 tsp dark sesame oil
1 tsp sugar
1/2 tsp salt
2 tbsp corn, peanut, or vegetable oil
1 lb raw shrimp shelled and deveined
12 scallions (about 2 bunches) in 2 inch slices
1 cup cashews

Directions:

In a bowl mix cornstarch and water together, stir until dissolved, stir in sherry, sesame oil, sugar, and salt. Set aside. Heat oil in a skillet over medium high heat. Add shrimp and scallions, then saute for about 2 minutes, stirring and tossing. Stir in cashews and cornstarch mixture; cook and continue stirring for about 1 minute until slightly thickened. Serves: 4 Prep: 20 minutes
