2 Cup Milk
1 1/2 Tblsp Tapioca
2 Eggs - Separated
1/3 Cup Sugar
pinch of salt
1/2 tsp Vanilla

Directions:
Directions:
Cook milk and tapioca in a double boiler for about 20 minutes.

Separate 2 eggs.

Whisk egg yolks, sugar, salt and vanilla together. Add this to the milk and tapioca.

Whisk egg whites into stiff peaks and fold into other ingredients.

When Lois was a little girl, she would make this before heading off to school. This was a regular dessert. Grammy Wheeler always served dessert. Sometimes Grammy would serve this with homemade strawberry jam dabbed on the top.
