3 eggs
2 c. sugar
2 c. shredded zucchini
1 c. cooking oil
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
1/2 c. nuts (if desired)
1 c. crushed pineapple, drained

Directions:
Directions:
Preheat oven to 350º. Grease 2 loaf pans (bottom only).
In large bowl, beat eggs until foamy. Stir in sugar, zucchini, cooking oil, and vanilla. Add remaining ingredients, and mix well.
Pour into pans and bake for 50-60 minutes.
Cool 10 minutes before removing from pans.
