~CRUST~
4 cups vanilla wafers
1/3 cups pecans, finely chopped
1/3 cup butter or margarine, melted
1 tbsp sugar
~FILLING~
2 8 oz pkg cream cheese, softened
1/4 c sugar
1 egg
1 lemon

Directions:
Directions:
Preheat oven to 350º. Using blender, chop wafers and pecans. Reserve 1/2 cup. In large bowl combine chopped wafers, nuts, and melted butter. Press onto bottom of 9x13" baking pan. In bowl combine cream cheese, sugar, and egg then mix. Squeeze in lemon juice and add small amount of grated lemon peel. Cream mixture until smooth. Spread over crust. Sprinkle with reserved 1/2 c chopped wafers. Bake 20-25 minute or until set. Cool. Serves: 36
