2 lbs idaho potatoes
1 c dill pickles
1 c dried celery
1/3 c sliced green onion
3 tbsp diced red pepper
2/3 c mayonnaise
2 tbsp prepared mustard
1 tbsp salt
1/2 tsp pepper

Directions:
Directions:
Boil potatoes for 30 min. until tender. Drain and cool. Peel and cut into 3/4 inch cubes. Combine potatoes, celery, pickles, green onions, and red peppers. Mix mayo, salt, mustard, and pepper until well blended. Pour over potato mixture. Cover and refrigerate for 2 hours. Serves 8
