1. Bhindi( Okra or Lady Finger )1/2 kg
2. Tomatoes 4 (medium)
3. Onions 2 (large)
4. Green chillies 2
5. Garam Masala 1 tbsp
6. Ginger-garlic paste 1 tsp.
7. Red chilli powder 1 tsp.
8. Oil 4 tbs
9. Chopped Coriander leaves 1/2 bunch
10. Bay leaves 1
11. Cloves 4
12. Salt to taste

1. Dice the onions and tomatoes.
2. Chop the chillies and corainder.
3. Slice Bhindi ( Okra) in long pieces.
4. Heat the oil in pan and add the Bhindi pieces. Shallow Fry them. ( or deep fry them, if you wish)
5. Keep the fried bhindi aside.
6. Heat 3 spoons of oil in a pan. Add the bay leaves and cloves.
7. After a minute add onions and fry them until light brown.
8. Add the chopped green chilli pieces .
9. Add the ginger-garlic paste and fry for one minute.
10. Add garam masala and fry for 2 minutes.
11. Add tomato pieces, red chilli powder and salt, cover the pan and cook for a few minutes until tomatoes become soft.
12. Add fried okra and mix slowly. Keep on heat for two more minutes and then remove the pan
13. Sprinkle some more garam masala on top .
14. Garnish with coriander leaves and serve hot.
