4 pieces Cod (or other light white fish)
3/4 c Granny Smith apples, diced
3/4 c shallots or onions, diced
1 T and 1/4 c grape seed oil
2 cloves garlic
2 T curry powder
1/4 c soft butter
10 grapes, halved
1 bunch chives, diced (optional)
Salt

Prepare Curry Butter:
Saute 1/2 c apples, 1/2 c onions/shallots and 2 cloves garlic in 1 T grape seed oil over medium heat for about 5 minutes or until onions soften. Add 2 T curry powder and 2 T water and saute another 2 minutes. Turn off heat, and add 1/4 c soft butter and set aside.

Prepare Fish:
Coat both sides of each piece of fish with salt and pepper. Warm 1/4 c oil in pan over high heat, then brown fish on one side; flip and repeat until cooked. Depending on thickness of each filet, the fish will take about 10 minutes to cook.

To serve, place fish on plate, then spread curry butter over fish and garnish with chopped grapes and chives.
