1/3 c chicken broth
1/4 c butter or margarine
1/4 c chopped onion
1 tbsp honey
1 tsp dried thyme
1/2 tsp salt
1/8 tsp pepper
1 broiler-fryer chicken (3 lbs) cut into pieces
Lemon Relish:
1 lemon
1/2 celery rib, cut up
1/4 small red pepper, cut up
2 green onions, cut up
1/2 tsp salt
1 1/2 tsp sugar
1/4 tsp hot pepper sauce

Directions:
Directions:
In a sauce pan, combine first 7 ingredients; bring to a boil. Reduce heat and simmer for 5 minutes, uncovered. Remove from heat. Dip chicken pieces in glaze, place on broiler rack. Broil 5 inches from the heat for 12 minutes, basting several times with the glaze. Turn chicken, broil for 10-12 minutes longer or until done. Peel outer portions of peel from lemon, set aside. Cut off and discard white membrane. Quarter lemon, remove seeds. Place lemon and peel in a food processor or blender. Process until finely chopped. Add remaining relish ingredients; process until vegetables are finely chopped. Serve with chicken. Serves: 4-6
