3 boxes corn bread mix
2 large yellow onions, peeled and diced
8-10 stalks celery, diced
2 eggs
2 tsp baking powder
1 c. golden raisins
1 c. coarsely chopped pecans
shredded meat and broth from cooked turkey giblets (cooked in water to cover with one onion quartered and 2-3 stalks of celery and celery leaves)

-Prepare corn bread according to directions the day before stuffing and roasting the turkey, cool remove from pan, crumble into an open bowl to dry out
-Prepare stuffing just before roasting turkey:
-In large missing bowl, add corn bread and next six ingredients
-Mix with hands so egg and baking powder are mixed in and all ingredients are evenly distributed
-Add shredded meat from giblets
-Add SMALL amount of broth, mix again with hands. Repeat with SMALL amounts until stuffing is moist throughout, but NOT gummy and sticky
-Stuff turkey, add remainder to casserole and bake covered
